National Probate Calendar gives his name as Thomas Allez Mollet in 1934, also this name on his wife Ellen's 1931 Probate. Possibly the differences lie in handwriting a z vs a y? In the London and Surrey Marriage Allegations on Ancestry the handwritten name is clearly Thomas Allez Mollet, but this has been indexed as Thomas Alley Moffat. This would account for the instances of Allery as well - a handwritten z with a loop below the line can look like 'ry'. Ditto the 1911 census - transcribed as a y but it doesn't look like other letter y on the page and is probably a z.
