beautiful little scarlet anemone that formerly grew wild in the vineyards, but has been so much in request that it has disappeared, except under garden cultivation. And finally, we must taste the wine of Jurençon and S. Faust, not in the hotels at Pau, but in the village cabarets. It is much in request, and is largely bought up by the Bordeaux wine merchants, who mix it with thinner wines to give them richness and body. It is of an amber colour, is strong, heady, and delicious.
