PREFACE
In submitting this book it is my desire to place in the hands of the confectioner and ice-cream maker, rational formulas, every one of which has been used by me personally.
I have endeavored to set down each recipe in every detail.
The illustrations are from photographs taken by myself, and I believe will assist in demonstrating clearly certain points of manipulation.
