Nugats.

Mix ground walnuts with the chocolate and dip vanilla cream in it.

Lemon.

Add the grated rind of two lemons to ten pounds of cream together with one teaspoonful of extract of lemon.

Orange.

Add the grated rind of one orange to ten pounds of cream together with one teaspoonful of extract of orange.

Raspberry.

Use one-half pound of thick raspberry jam to ten pounds of cream together with one teaspoonful raspberry extract.

Strawberry.

Use one-half pound of thick strawberry jam to ten pounds of cream together with one teaspoonful of strawberry extract.

Butter.

To ten pounds of cream add 1 pound of the very best creamery butter and one teaspoonfull vanilla. After kneeding the butter in, set in the ice-box or a cool place for a short while.

Maples.

To ten pounds of cream add one teaspoonfull maple extract and a small quantity of burnt sugar (about a teaspoonful).
